Oysters with a touch of citrus slightly spicy
Rafa Centeno is the Chef of the restaurant Maruja Limón de Vigo espumos (has a Michelin star) and member of the Grupo Nove and developed estras Galician Oysters (OYSTERS with a touch of citrus slightly spicy) in a very original way that leaves no one indifferent, where the taste of the sea contributed by the oyster is interspersed with the flavour of citrus, mint, green galician.
For the preparation of a pot of 106 grams you will need a kilo of oyster alive. I ingredients are: oysters, onion, it, carrot, vermouth, ginger, lemon, lemon peel, coconut milk, mint, ci lantro, rubber gum, maltodextrin, green chile, shallot, lemon grass, galanga, cumin, turmeric, olive oil and salt.
This preserves should be kept in cool place and away from sunlight. Once opened keep refrigerated between 0ºC and 5ºC and consume before 2 days
